Simple, healthy and full of flavor. I love kebabs anything! If it’s on a stick, it just tastes better, it’s more fun. This can be made on the stove or on the grill in the summertime! It is definitely something I make on repeat. Requested at home over and over again with minimal work.
I love cumin, it makes the house smell like there’s some great dinner cooking. Love it with meat, vegetables, in stews… The smell just makes the house cozy.
My chicken marinated overnight because of a change in dinner plans that night and I would definitely do that again, for flavor and just for the ease of a quick supper the night itself. Just put the chicken on skewers, and pan fry. The rest of diner comes together while the chicken is cooking. Some roasted tomatoes and tzatziki. I heated up some naan for the carb lovers and I would definitely love this with rice as well.
Ingredients for 2
- 1 lbs of chicken tights
- 1 tablespoons of ras el hanout
- 1 teaspoon of cumin
- 1/4 cup of whole plain yoghurt for the chicken
- Pepper and salt
- Unsalted butter
- 1 cup of whole plain yoghurt for the tzatziki
- 1/4 of an English cucumber
- Fresh herbs, whichever you have on hand or like (parsley, cilantro, basil, scallions)
- 2 teaspoons of fresh lemon juice
- Baby tomatoes
- Olive oil
How to make it
- Preheat the oven to 360 degrees F. Place the baby tomatoes in an oven dish, drizzle with olive oil, pepper and salt. Put in the oven until they burst. It took me about 30 minutes.
- Cut the chicken tights in cubes, about 1 by 1 inch and put in a mixing bowl. Add the ras el hanout, cumin, yoghurt, pepper and salt to taste. Mix it all good and let it sit, in the fridge for half an hour.
- Using any skewers you have on hand, put the chicken on it, nice and tight.
- Melt the butter in a pan, large enough for the skewers, on medium-high. Sear the chicken skewers until golden brown on all sides. About 10 minutes.
- Meanwhile, grate the cucumber above a colander and squeeze out as much liquid as you can. Make tzatziki by mixing yoghurt with the grated cucumber, the freshly cut herbs, lemon juice, pepper and salt to taste.
Serving suggestion
Delicious with naan bread or rice on the side.
